Paleo Banana Pancakes

You won’t miss the gluten or dairy with these Paleo Banana Pancakes.  My son, Jackson, eats these daily, so I always have big gallon-sized zip lock baggies full so I can take out a small amount, toast them up and lather them with coconut oil.  All ingredients I know and trust and kid approved!

**As long as you’re making them, double or triple the recipe!

Ingredients (makes 12-18 pancakes):

2 eggs
1/3 cup almond milk
1 1/2 tsp vanilla
1 cup almond flour
1/2 tsp baking soda
1/4 tsp salt
2 Tbsp coconut oil
2 (overly) ripe bananas
1 Tbsp honey
1 Tbsp maple syrup

Directions:

  1.  Place all ingredients into a blender, blend on high for 30-60 seconds.
  2. On a greased skillet, pour desired size pancakes.  When you see bubbles, it’s time to flip (about 2 minutes/side)
