Pumpkin Week Day 2: Pumpkin Chili

Chili is always a good idea, especially on an overcast day, especially adding the sweetness of Pumpkin!  This recipe makes a big batch, so expect leftovers, or it freezes well for dinner another night!


Everything in a crockpot:

15 oz can black beans
15 oz can pinto beans
15 oz can kidney beans
15 oz can garbanzo beans
8 oz can tomato sauce
28 oz can diced tomatoes
1 cup pumpkin puree
4 oz can diced green chili
10 oz water
1/2 cup blended carrots
1 medium yellow onion
5 cloves garlic
1 lb ground beef
2 Tbsp coconut oil
1 tsp salt
2 Tbsp chili powder
1 tsp cumin
1/2 tsp paprika
1/2 tsp onion powder
1/2 tsp garlic powder


  1. Chop onions and sauté over medium heat in coconut oil.  Mince garlic and add in to saute with onions.  Put into crockpot
  2. Brown ground beef and put into crockpot
  3. To the crockpot, add all ingredients and set to low heat for 3-5 hours.
  4. Serve with diced onions, shredded cheese, avocado, sour cream and or cornbread
