Pumpkin Week Day 3: Pumpkin Granola

I went to Target the other day, and was looking in the Granola section and $6.99 for a little bag of Organic, Gluten Free granola seemed like a little much…and no sign of Pumpkin flavor!!!

This turned out delicious, crunchy, and perfect to eat on it’s own or mixed with yogurt.  The only two changes I’d make (from what I mention in the video below) is to use 1/2 cup of maple syrup to sweeten it up a bit more and bake it for 40 minutes to add that crunch.

Gluten Free Pumpkin Granola:

2 cups Gluten Free Oats
1/2 cup pumpkin
1/3 cup melted coconut oil
1/2 cup slivered almonds
1/2 cup pumpkin seeds (pepitas)
1/2 cup walnut pieces
1/2 cup maple syrup
1 tsp vanilla
1 Tbsp pumpkin pie spice
2 tsp cinnamon
1/2 tsp salt


  1. Preheat oven to 325 and line cookie sheet with parchment paper or silpat mat
  2. Melt coconut oil
  3. In a large bowl combine all ingredients, mix well
  4. Pour onto cookie sheet, spread thin and evenly
  5. Bake for 40 minutes (1/2 way through, give the granola in the oven a mix to make sure no little pieces are burning)
