Pumpkin Week Day 4: Pumpkin Pie Muffins
Who doesn’t like a good pumpkin muffin? These are just as tasty, without the junk!
Pumpkin Pie Muffin Recipe:
1 1/2 cup almond flour
2 Tbsp palm shortening
1/2 cup honey
1/2 cup coconut oil
1 Tbsp pumpkin pie spice
1/2 tsp cinnamon
1/4 tsp salt
1/2 tsp baking soda
1 cup pumpkin puree
2 eggs
Topping (optional):
1/3 cup coconut sugar
1 1/2 Tbsp coconut flour
1/3 cup palm shortening
1 1/2 Tbsp ground cinnamon
Directions:
1. Preheat oven to 350 and line muffin pan with paper liners
2. In a blender or food processor, mix all ingredients
3. Pour batter, filling muffin tin 3/4 full.
4. (Optional Topping) In a small bowl, mix together all ingredients and sprinkle topping over unbaked muffins
5. Bake for 30 minutes or until a toothpick comes out clean
