Corn Salsa: Recipe and Video

This is a summer staple in our household!  It’s fresh, easy, beautiful, and a perfect side salad/salsa to any BBQ.  It’s a lot of chopping, so put on some music, get the kids involved, but I promise it’s worth it!

Use organic ingredients, especially the corn {{because of our major GMO problem here}}


7-10 ears of corn
3 baskets of cherry tomatoes, any color
6 mini sweet bell peppers
6-8 limes
1 red onion, medium
2 cups pico de gallo fresh salsa
1/4 cup cilantro
2-3 tsp salt (to taste)

1.  Bring a large pot of water to a boil and boil the corn for 10 minutes.  Let cool.
2.  Chop the tomatoes, onion, cilantro and peppers into small pieces and put it in a large bowl.
3.  When the corn has cooled off, cut it off the ear and add to the bowl.
4. Add in the pico de gallo salsa to the bowl.
5.  Cut the limes in half and juice them into the bowl of chopped ingredients.
6.  Salt the salsa to taste **Brings out the amazing fresh flavors!
