Mass Producing Banana Pancakes
Over the past 5 years, I’ve learned to cook smarter, not harder. As long as you’re taking the time to make one batch of something, try doubling it and freezing the leftovers! This trick has saved me so much time!
Jackson is Gluten Free, Dairy Free, Soy Free and as Organic as possible, so I make a lot of his foods. He tends to stick with the same 20 or so foods, so I’m cooking them a lot! I don’t have time to be in the kitchen making pancakes, chicken nuggets and bacon everyday, so I mass produce them!
You can mass produce and freeze all types of baking: breads, cookies, muffins, pancakes, waffles, french toast, etc. Don’t let the fact that you’re freezing your baked goods scare you! When stored in airtight tupperware or gallon-sized baggies, your big batches will last anywhere from 3-6 months!
When you’re ready for an individual serving, pull the desired amount out of the freezer, pop them in the toaster oven (like you’re toasting a slice of bread), and 2-3 minutes later, you’ll have a perfectly heated, fresh portion…just like you do with frozen store-bought waffles/pancakes/muffins.
